Rocket, Walnut & Goat’s Cheese Salad

  • 4 cups rocket leaves
  • 4 cubes Meredith goat’s cheese (or your preferred brand)
  • 6-8 radishes, sliced into coins
  • 1 cup walnuts
  • 1/4 cup pepitas/pumpkin seeds
  • 2 tbsp olive oil
  1. Combine all ingredients in a big salad bowl, crumbling the goat’s cheese with your fingers.
  2. Serve as a side dish or enjoy it on its own for lunch. Try adding some shredded chicken breast for extra protein.

 

Serves 4.
