- 4 cups rocket leaves
- 4 cubes Meredith goat’s cheese (or your preferred brand)
- 6-8 radishes, sliced into coins
- 1 cup walnuts
- 1/4 cup pepitas/pumpkin seeds
- 2 tbsp olive oil
- Combine all ingredients in a big salad bowl, crumbling the goat’s cheese with your fingers.
- Serve as a side dish or enjoy it on its own for lunch. Try adding some shredded chicken breast for extra protein.
